Sundays At Home #151



Welcome to Sundays at Home friends! 

I shared this image of our entryway on Instagram the other day, showing off the flowering branches. Someone commented on how serene the space looked. So now I have a confession. In this very same space the other morning, we had a chicken trotting around as I tried to get our three sons out the door for school. A chicken. In our house. Boys lauging-yelling and scrambling for shoes. And me. Racing down those stairs, "Get it out before it..." :) So serene, right?

We try to put our best foot forward. And that's what this party is about... inspiration! But should you ever be tempted to feel inadequate as you look through the posts of beautiful ideas that people link up here, remember there are "behind the scenes" images we often don't see. And sometimes they involve a chicken in the house and a frazzled mom.

Farm Fresh Vegetables & Summer Recipes

These are the "glory days" of our humble little garden.
Each day it's changing. Some vines are becoming weighed down by burgeoning squash, while other vines - yielding long green beans - race upwards on our new teepee trellis.


I'm happy to report that although this is our second summer here, our boys still find joy in discovering the vegetables and bringing in the harvest.


The sense of wonder isn't quite as earth-shattering for them as it was last year (as first time "farmers")... But, I think I am making up for the difference. Maybe my excitement is because I'm learning just a little bit more each year. Maybe it's because we've planted a few new types of vegetables. Maybe it's an independent spirit emerging, you know, "living off the land." 

Or, maybe it's because I need to get out more these days. ;)


Whatever the case, I wanted to share a few recipes that we are enjoying, specifically as it relates to our bumper crops of green beans and zucchini... 


Baked Parmesan Zucchini is a total YUM. 

It's a healthier version of zucchini sticks with no deep frying involved. (You bake it first and then broil for a few minutes for that crispy finish.) You can find the recipe here.


Another great seasonal recipe is One Pan Greek Chicken. 

They had me at "one pan." You too? 

The recipes calls for chicken thighs, but I used chicken breasts, halved. The recipe also calls for baby red potatoes... we had baby yukon gold and they worked well too. Perhaps most importantly, this dish makes a delightful home for our garden's green beans! Find the recipe for this flavorful meal here.


And of course, due to our boys' requests, there's sure to be plenty of Zucchini Bread this season. Their favorite is made from this recipe


The other excitement going down in our garden is... the corn is coming!

And I'll close with a confession. Last night, I came into the house and said, "Guess what guys?! We have little pumpkins in our garden!" Later I realized that these (below) are, in fact, acorn squash. (And our first acorn squash, at that.) 

Quien supo?! (Who knew?!)

My Favorite Salmon Recipe Ever!

(I borrowed that term of endearment from a British friend… isn't it the sweetest?! 
I think I need a British accent to pull it off, but thought I'd test it out here ; )

I hope your day is going well! It was a very celebratory day for us - Our new nephew was born, our niece turned eight, and we celebrated my sister's birthday at our house with a surprise birthday lunch. (I'll post more pictures and write about it soon!)

For lunch, we enjoyed salmon, mushroom risotto, kale salad and rosemary bread. And for dessert we had inhaled chocolate cake with raspberry sauce. (Dark coffee goes without saying in Seattle.)

I wanted to share with you my favorite salmon recipe (it's what we had today). It has been a crowd-pleaser and one of my go-to's for company for years! (Thank you to the sweet southern family who first  served it to us almost a decade ago!)


Sesame Soy Baste for Salmon

Mix together:
1/3 Cup Soy Sauce
3 Tablespoons Minced Green Onions (include tops)
2 Tablespoons Oriental Sesame Oil
1 Tablespoon Hot Chile Sesame
1 Tablespoon Rice Vinegar
1 Tablespoon Minced Fresh Ginger
2 Teaspoons Sugar
2 Cloves Garlic
Dash Red Pepper

Marinate the salmon for a few hours before you bake or BBQ it. Bake at 325 degrees for 40 - 60 minutes (depending on size of fillet and preference).

Tips:
  • Double recipe for large fillet.
  • Baste fish during BBQ so it is moist.
  • Serve over a bed of spinach if desired.
  • You can keep your ginger root in the freezer for a LONG time! It will naturally separate from the outer skin when it is frozen - makes for easier grating.
  • Most of the ingredients in this recipe are found in the asian aisle of the grocery store. Though it's a little bit of an investment, the ingredients you buy can be used to make this recipe several times.
